Bizoe 2013 Henrietta

Vinification
The grapes have been specially selected from the Franschoek region to create state of the art wines.  The grape clusters were harvested in the early morning to preserve the natural aromas.  Only the best grape bunches have been selected and thrown into the press.  After pressing was completed, the juice was directly poured into barrels.  Once inside the barrels, natural fermentation took place and the wine was left on the primary yeast sediment for 7 months.

Winemaker’s Description
Rich aromas and flavors of citrus, tropical and honeyed white peach with sweet spice and soft floral notes.  A delicate finish derived from being matured in oak barrels for 7 months. This wine pairs nicely with grilled seafood on mixed greens and light pasta dishes.  Limited edition wine: 2,700 bottles produced.

Viticulture & Vinification
Vine age – 18 years; vine density – 3,500 vines per hectare; yield – 8 tons per hectare.  Micro irrigation takes place before harvest.  Vines are planted 1.3 meters apart to create density so the vine can compete for nutrients and create concentrated fruit.  Intensive leaf and shoot management in October allows for even ripeness and shady fruit concentration development.

Grapes picked at 23.5° Brix and 2 weeks skin contact in open fermenters.  Skins and juice were mixed daily.  After fermentation, the skins were pressed at 1.2 bars of pressure.  Using only dried yeast, fermentation occurred over a three week period.  Wine matured for 16 months in new and second fill small French oak barrels.

Winemaker’s Description: A well integrated wine with exciting sweet fruit and spicy flavors. Ripe red cherry, plum, and juicy raspberry aromas and flavors with hints of vanilla, sweet wood, and soft herbal notes. This wine will develop even further over time and will complement red meat roasts and Mediterranean style dishes. Limited edition wine: 4,500 bottles produced.
